A new discovery... Imagine my surprise when I found out that there was more to coffee than just buying it at a convenience store. Coffee to me was all about trying to find a coffee that tasted like it smelled. Not an easy task. There are a lot of coffee companies that try to make coffee taste better by blending varieties and or adding flavors. I had no idea what actually went into creating coffee from coffee plant to cup. WOW!!!
Research... I stumbled upon Green Coffee while I was looking for a certain flavor of coffee online. It was actually a website that sells raw coffee (green coffee) to people who want to roast their own coffee. What! Roast your own coffee? Who knew the average person could do that? Obviously not me. I suppose since average people brew their own beer, make their own wine, it stands to reason that they could roast their own coffee.
Chlorogenic Acid
Okay, now I am starting to think to myself, this sounds like fun. I thought, maybe I will give it a try. And so I started to read more and more about roasting one's own coffee. However along the way it was almost impossible to not read about Chlorogenic Acid.
Oh yeah! Chlorogenic Acid.
It seems that so many Health Benefits come from this compound. So now, I turn my focus to Chlorogenic Acid. I learn that the raw coffee bean (green coffee) has high levels of this stuff. The only problem is that the temperatures used to roast coffee destroy the Chlorogenic Acid in the coffee bean, along with many other antioxidants.
Unroasted Coffee Beans
Then I find out that coffee can be made without roasting it first. It is not as easy as just making roasted coffee though. However the end result is a coffee that retains all of the Health benefits that are hidden in coffee by nature.
Green Colored Coffee
After having made some of this unroasted coffee, I can tell you it is not anything like roasted coffee. The aroma is different, the taste is different, even the color is different. The most surprising thing about green coffee is that there are no jitters, no anxiety, just energy all day. After experiencing green coffee I can honestly say that I don't want to drink roasted coffee anymore. And yes, The coffee is truly GREEN in color.
